Born in Quito, Ecuador, Sebastián Cajas has dedicated the past 16 years to the service and hospitality industry. His career spans restaurants, bars, and hotels across both Quito and Austin, where he’s developed expertise in guest experience, cultural storytelling, and Latin American spirits.
Seven years ago, Sebastián made Austin his home, and he now serves as the Bar Manager at Veracruz Fonda & Bar. In this role, he shares the authentic flavors, spirits, and traditions of Mexico and Latin America—creating meaningful, memorable experiences for every guest who walks through the door. Known for his warm approach, deep knowledge of regional spirits, and passion for hospitality, Sebastián continues to elevate Austin’s culinary scene one experience at a time.
